１００年以上前に作られたドイツ製の手回し焙煎機で少量ずつ丁寧に焙煎しています。エチオピア、ナチュラル製法の豆を使用し、香り高くフルーティでスッキリした味わいです。
We roast little by little with a hand-cranked roasting machine made in Germany over 100 years ago. Using beans grown in Ethiopia and natural method, it has a fragrant, fruity and refreshing taste.

鮒鮨
鮒鮨の共和え
発酵した飯と鮒鮨を合わせた共和えに臭みは無く、上品なチーズのような風味。高島の日本酒の肴に。クラッカーにのせたり、パスタの調味料としても◎。
玄米菜食弁当
sikari と同じ町内にある”お米食堂なごみ”さんの玄米菜食弁当。
お米は、自家栽培米の農薬・化学肥料不使用の寝かせ玄米ごはん。おかずは、地元の農薬不使用や減農薬の野菜。調味料は自家製の発酵調味料など、身体に優しい素材の味。発酵カレーや小麦粉不使用のケーキなどもございます。

A lunch box of brown rice and vegetarian menu by “Okome Shokudo Nagomi” in the same town. They make side dishes with rice that does not use pesticides or chemical fertilizers and seasonings that use the rice bran. Flour-free rice flour cake is also nice!

魚治の鮒鮨。2年熟成の発酵した飯と鮒鮨を合わせた共和えに臭みは無く、上品なチーズのような風味。高島の日本酒の肴に。クラッカーにのせたり、パスタの調味料としても◎。
Uoji’s funazushi by Korian, a kaiseki restaurant. The combination of fermented rice and funazushi has no odor and has an elegant cheese-like flavor. As a side dish for sake from Takashima. You can put it on crackers or use it as a seasoning for pasta.
ハッピーどぶろく
長浜”湖のスコーレ”内のハッピー太郎醸造所。
どぶろくは、お米まるごとのお酒。
発酵させたもろみを濾さず、絞らず、そのままに。お米の栄養や旨み、甘みがそのまま残された白濁・微発泡のお酒。
自然循環農法（無農薬、無肥料米）で柴田さんが栽培したお米、「ありがとう米 SHIBATA GROUND MUSIC」を使用。米麹屋ならではの完熟米麹を使用した発酵愛を掲げたどぶろく。季節のどぶろく、”something happy”もございます。

Doburoku is a sake made from whole rice. Not strain the fermented mash, squeeze it, and leave it as it is. A cloudy, slightly effervescent liquor that retains the nutrition, tasteness, and sweetness of rice.
Rice cultivated by Mr. Shibata using natural circulation farming (pesticide-free, fertilizer-free rice), “Thank you rice SHIBATA GROUND MUSIC” is used. We also have a seasonal doburoku called “something happy.”
